Salmon Pattie


Salmon is packed with protein, omega 3 fatty acids and B vitamins. The American Heart Association recommends consuming 2 servings per week of fish. It is always preferred to choose a heart healthy fatty fish, especially salmon! Try this meat alternative for dinner tonight.

Ingredients:

1 salmon fillet

1/2 cup bread crumbs

1/2 cup chopped onions

2 eggs

1/4 tsp basil

1/4 tsp pepper

1/2 tsp garlic powder

1 tbsp olive oil

Instructions:

Add the salmon fillet (cut into large pieces with the skin taken off), breadcrumbs, eggs and seasonings into a food processor. Pulse until a thick and fairly firm consistency is achieved.

Transfer contents of food processor into a mixing bowl. Here comes the messy part – get your hands in there! Make sure the contents are evenly mixed. Form 4 small patties. Or, if you are hungry (like me), form 2 large patties!

Brown patties in a skillet on medium to high heat. Brown each side for about to 2-3 minutes.

Transfer patties into a shallow pan and bake for 25 minutes at 400 degrees.

Add your favorite bun and toppings. Enjoy!
