Planted Bowl with Olive Oil and Lime Dressing

In your favorite glass bowl, layer these plant-based ingredients:

1 cup + baby spinach, 1/4 cup shredded carrots and 1/2 cup cooked couscous. Place on top: 1/2 sliced avocado, 1/4 cup cooked lentils, 1/4 cup kidney beans, 1/4 cup chopped red onions and 1 tbsp pumpkin seeds.

Olive Oil and Lime Dressing:

1 tbsp of olive oil, the juice of 1 fresh squeezed lime plus garlic powder and black pepper seasoning according to your taste. Stir contents and drizzle over Planted Bowl. Enjoy!
