Spinach and Mushroom Balls
These tasty “meatballs” are packed with antioxidants and are perfect as salad toppers.
Ingredients:
16 ounces of sliced baby Bella mushrooms (or your favorite type of mushroom!)
2 eggs
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 cup fresh baby spinach
1 tbsp garlic
1 tbsp of olive oil
Instructions:
Place all ingredients (except olive oil) into a food processor. Pulse until a finely chopped consistency is reached.
Transfer contents of food processor into a mixing bowl. The next part is a bit messy! Get your hands in and make sure all ingredients are evenly distributed. Roll into 12 balls. Remember-they will feel a bit more moist as compared to a traditional meatball.
Brown balls in a large skillet (medium to high heat) with 1 tbsp of olive oil.
Transfer balls into a pan and bake for 25 minutes at 350 degrees.
