Spicy Pumpkin and Carrot Greek Yogurt

Ingredients: Serves 4

2 cups non-fat vanilla Greek yogurt

1 cup canned pumpkin purée

3 tbsp chia seeds

1 cup shredded carrots

3/4 cup shredded sun-dried coconut

3/4 tbsp ground ginger

Instructions:

Simply stir all ingredients in a large mixing bowl. Place into your favorite mason jars. Chill for several hours and enjoy!
