Broccoli and Yam Quinoa Burger
Ingredients:
1 large broccoli head
15 ounces canned cut yams
1 egg
1 cup 100% whole wheat bread crumbs
2 cups cooked tri color Quinoa
1 tsp black pepper
1 tsp garlic powder
Instructions:
Chop broccoli into small floret pieces. Steam for about 10 minutes or until they are softened.
In a food processor place broccoli, yams, quinoa, egg, bread crumbs and seasonings. Pulse until a thick, paste like consistency is achieved.
Form mixture into 6 burger patties.
On medium to high heat, warm olive oil in a skillet. Place patties in the pan and cook on each side for 4 minutes.
Enjoy with your favorite bun and burger toppings!
Tips:
Purchase pre-cut broccoli florets and/or “boil in a bag” 100% quinoa (cooks in 10 minutes).
Canned yams are used as a time saver in this recipe - feel free to peel and bake fresh yams or sweet potatoes instead.
Canned yams are often packed in syrup. Look for light syrup varieties. Try to find a brand with the lowest sugar content available.
